For a business that has been around for more than 8,000 years, the wine trade still manages to evolve at an impressive speed. Money, politics, climate, fashion and science are remaking that glass in your hand in ways both discreet and radical, and the speed of innovation is increasing as never before. In this changing world, power is on the move, consumers decide what goes, and the old aristocracies of Bordeaux, Burgundy, Piedmont and California are scrambling to adapt. But adapt to what? The next great wine will come from China
China is now the world’s biggest importer of fine wine, much of it sold through Hong Kong, the new wine auction capital of the world. For today’s image-conscious Chinese, a pot of tea, or even a flask of fiery baiju spirit on the restaurant table no longer cuts the chilli sauce. A £1,500 bottle of Château Lafite rather does – even given the distressing local tendency to mix it with Coca-Cola or Fanta. Rupert Hoogewerf, the British compiler of China’s “Rich List”, nevertheless reports that: “Consumers are gradually becoming more appreciative of wine, and less driven by snobbery,” and forecasts that when the current market madness (the latest must-have vintage being Romanée-Conti 1990 at around £23,000 a bottle!) calms down, China will become a huge but mainstream wine-drinking nation.
Not that Europe’s vineyards will necessarily benefit. The first home-grown Chinese “superwine” has already arrived to both rave and apprehensive reviews. Jia Bei Lan, a silky cabernet sauvignon blend, produced in Ningxia, a central province previously best known for its goji berries, recently became the first Chinese wine to win a major international trophy. Judges at the Decanter Awards in London described the £30-a-bottle brew as “supple, graceful and ripe”, and praised its “excellent length and four-square tannins”.
…Unless it comes from England
This is a remarkable moment in the multi-millennial history of wine, and all the signs are that England will play a big part in its future. The great wine regions of France and Italy may look to have it made with their perfect summers and contented vignerons scoffing confit de canard on shady bistro terraces. It won’t stay like that for long, though, because the real wine action is heading for somewhere south of Basingstoke.
By the end of this century, on expert projections, southern England will have the ideal climate for wine making, and the overheated vineyards of France will be producing the kind of delinquent plonk currently served up in pizza bars. According to Gregory Jones, one of the world’s foremost wine climatologists: “The best conditions for, say, chianti, will be in Germany and Belgium, and those for making fine bordeaux-style wines will be in the English Home Counties.” The movement is already under way. Vine cultivation in England has soared by 40 per cent over the past five years, and last month work began at Rathfinny in East Sussex, an estate that is projected to become, by 2017, England’s biggest vineyard. Its owner, former hedge fund boss Mark Driver, left the City to pursue his dream of creating “the British Bollinger”, and confidently forecasts that England will soon be setting the global standard.
Other challenges to the old hegemony are arising everywhere from the Middle East, where, despite such hindrances as war and Islamic proscription, wine is undergoing a renaissance, to Eastern Europe, where cult wines from Georgia, Russia and even Kosovo are hitting the market.
‘Terroir’ means nothing
Wine’s current war of liberation (as the romantic school of oenology likes to see it) is being fought against an establishment steeped in ancient, but frequently suspect, nostrums.
A favourite one is the French concept of “terroir” which roughly translates as “sense of place”. The basic shtick is that grapes growing on a picturesque slope beside, say, the River Saône, will taste detectably different from those growing a quarter of a mile away, let alone in Chile or Bulgaria.
Viticulturalists increasingly regard this not only as bunkum, but as a cover-up for bad wine making. What really matters is the quality of the grapes and the skill of the winemaker. The terroir myth has, nevertheless, worked astonishingly well to maintain the perceived specialness of traditional wine areas. Now its credibility is collapsing: “Terroir,” says the wine writer Malcolm Gluck, “is utter b——-.”
The ‘Frankengrape’ is lovelier than it sounds
Wine buffs don’t like to admit it, but the world’s main grape types – cabernet, chardonnay, merlot, riesling et cetera – are, essentially, the same thing. All are descendants of a single species, Vitis vinifera, which was domesticated in Asia Minor in ancient times, and slowly spun off into the varieties we know today.
The problem is that these otherwise estimable vines have lost their appetite for sex. According to groundbreaking recent research by Prof Sean Myles, a geneticist at Cornell University in California, the industry’s centuries-old obsession with “varietal purity” has fatally weakened the plants’ gene structures, destroying their natural resistance and making them increasingly vulnerable to infections and changes in atmospheric conditions.
The growers’ stopgap answer has been to bombard their vineyards with ever-larger doses of chemicals, but such practices will be mostly banned by the European Union from next year. The only real answer, says Myles, is Frankengrape — genetically engineered vine varieties with built-in immunity to the many pests and diseases that tend to afflict such highly-strung plants. The problem is that the wines of the future are likely to taste different. And that is a tough thing for classicists to swallow.
It’s always worth spellchecking the label
For all the flowery prose that garlands the subject of wine, the fact remains that even the greatest palates of the age find it impossible to consistently identify the good stuff. Tales abound in the trade of blind tastings where experts have proclaimed planted glasses of plonk to be the products of fabled châteaux, while dismissing the finest vintages as undrinkable. Along with the reluctance of prominent collectors to admit to being fooled, all this plays beautifully into the hands of today’s sophisticated wine fraudsters.
Con artistry is nothing new. The oldest and simplest racket is to slap a fancy label on a bottle of something ordinary. Today, though, with a global wine market worth billions, the ruses are becoming more and more ingenious. Counterfeiters can produce near-perfect copies of bottles, corks, capsules and boxes complete with forged paperwork attesting to authenticity.
In China, where loss of face is fatal, fraud has grown to what one expert calls “jaw-dropping levels”. Even in the United States, where collectors are far more willing to report sharp practice, there have been dozens of scams. In a current lawsuit, the billionaire Bill Koch, an avid collector, claims he has been defrauded by up to $5 million. (The dealer selling to him, Rudy Kurniawan, was tripped up by a bottle of Domaine Ponsot he tried to sell at auction in 2008 which was passed off as having been made in 1929; the winemaker didn’t begin estate bottling until 1934.)
But the rip-offs aren’t all at the high end of the market. Last year thousands of counterfeit bottles of Britain’s bestselling brand, Jacob’s Creek, turned up on grocery store shelves in Greater London. The fraudsters, however, gave themselves away with an elementary spelling error on the label, which read “Wine of Austrlia”. Perhaps it really does rot the brain.
Have wine, will travel
For the lady who doesn’t want to be seen tottering out of Oddbins with a bottle under her arm, here’s the ingenious new Volére wine handbag. Styled to resemble one of those chichi Milanese shoulder bags, it holds 750ml of Italian red, white or rosé, which can be accessed by a discreetly concealed side-tap. Premiered earlier this year by the Californian wine retailer Volére, the bags, sadly, are not yet on sale outside the US, but the enthusiastic reception that has greeted them hints at how far the market is moving beyond the idea of wine in conventional glass bottles.
Later this year, the world’s first recyclable paper wine bottle should begin appearing on Britain’s supermarket shelves. The brainchild of the inveterate Suffolk-based inventor Martin Myerscough, the bottle gets around its most obvious difficulty with the help of a thin foil “bladder”.
Myerscough, who has set up a company, Greenbottle, to market the design, claims its carbon footprint is 10 per cent of a glass bottle’s, and that it can be tossed on a compost heap when finished. “We’ve done a lot of testing with consumers,” he says, “and people are pretty happy with it.”
Wines have star signs too
The hottest new trend in wine is “biodynamics”, although those trumpeting it happily admit that the idea has been around for decades. It flows from a belief that mysterious energy forces, cosmic rhythms, lunar movements and natural earth patterns can make what is grown “vibrate in harmony with the universe”.
The standard theory is based on the work of the Austrian “spiritual scientist” Rudolf Steiner, who outlined his ideas to broad scepticism in the Twenties. Modern winemakers have proved more enthusiastic, though. Steiner’s foremost disciple, the famed Loire grower Nicolas Joly, is prone to baffling hard-nosed buyers’ conferences by saying things like: “For a vine, spring is the victory of sun forces over earth forces. In autumn the law of death comes into force.” It’s hard to argue with his wines, though.
Alcohol is not compulsory
Blame it on faddism, the nanny state or good sense, but the days of those limb-numbing, oak-soaked, beast-in-a-bottle wines are numbered. Last year sales of lower-alcohol wines rose by 66 per cent in the UK.
The trend towards sky-high booze levels really began with the New World wine invasion, led by Australian shirazes and chardonnays that regularly weighed in at 15% abv. Today, “lifestyle concerns” are reversing it. Sainsbury’s is committed to doubling its sales of lower-alcohol wines by 2020, “and we intend to reduce average alcohol content across the board”, says a spokesman.
… And nor are grapes
Although the European Union, with characteristic lack of imagination, stipulates that anything describing itself as “wine” must be made from fermented grapes, there is an expanding school of freethinkers which feels otherwise. China already markets a popular fish wine, described as “zingy with overtones of squid”, while the Los Angeles Times recently reported on the popularity of cannabis wine among California’s middle-class baby boomers. The brew is made – allegedly behind the scenes by some of the state’s premium vintners – by dropping a pound of marijuana into a full cask of fermenting cabernet or zinfandel. Sadly, Britain’s sole act of rebellion is buying a bottle of sweet elderflower from the W.I.

Screw caps are turning up on more and better wines

A reader and his wife, who buy cases of wine through a club membership, recently told me they were dismayed that so many bottles are now topped with screw caps. They said that each case they received was evenly divided between red and white wines, and of the six whites, four usually have screw caps instead of corks.
“With our last shipment we even got one red with a screw top. Is this usual? It seems rather cheap to me,” the husband said in an email. “I miss the cork and the joy of popping open a bottle.”
I think most wine drinkers would agree that they enjoy the celebratory cork-popping ritual. But while screw caps once were associated with cheap wine, they are more frequently appearing on higher-priced bottles.
Wineries say screw caps protect their wines from “cork taint,” in which a chemical called TCA (2,4,6-trichloroanisole) creates an unpleasant odor that smells like a damp basement, moldy newspaper or a wet dog. The wine is then considered “corked” or “corky.” Depending on whose statistics you believe, cork taint ruins 1.5 percent to 8 percent of wines.
The move to protect better wines with screw caps started about 12 years ago with a group of Australian winemakers who believed the inconsistency of cork was affecting the quality of their Clare Valley rieslings. A year or so later, in 2001, producers in Marlborough, New Zealand, created the “New Zealand Screwcap Wine Seal Initiative.” The group started a scientific study that went on to show that screw caps are superior to cork for sealing wine. Today, most wines from Australia and New Zealand, including some priced at more than $100, are bottled with screw tops.
Last year, the Hogue Cellars, a major Washington State winery, announced it was converting all of its wine, including its premium Genesis and Reserve labels, to screw caps. The decision was based on five years of research comparing Saranex-lined screw caps with other types of closures. Dow Chemical’s Saranex is a layered plastic film that contains Saran resin (think food wrap).
The study found that wines aged under Saranex-lined screw caps tasted better than those topped with aluminum or tin-lined screw caps or synthetic closures. This was Hogue’s second screw cap study. The findings of its first study, released in 2004, compared natural cork, synthetic closures and screw caps, and found that wines bottled under screw caps were cleanest and best retained fruit flavors.
Still, I admit that I cringe when I’m dining at a better restaurant and the waiter ceremoniously shows me the label, then unscrews the cap. That just seems wrong.
But perhaps Harry Peterson-Nedry of Oregon’s Chehalem Wines had a point when he discussed the winery’s increasing use of screw caps. “I view this move a little like going from vinyl to CDs in music,” he wrote in a 2004 newsletter. “Even if we still have a turntable (read corkscrew) for romance and old times’ sake, we’ll seek digital purity in the long run — startlingly bright and clear, as if in the concert hall, without scratches, hiss and warping in the sun.”

In the last five years, medical research has focused on wine polyphenols as a potential preventative for cognitive decline, but there has been little success with animal tests. This new study, from Mount Sinai in New York, comes one step closer to making such therapy a reality.
In lab conditions, polyphenols have broken down amyloid-beta plaques, which clog up the brain’s pathways in Alzheimer’s. In rodent testing, however, it becomes more of a challenge. Previous research finds that red wine-based supplements are often digested in the intestine, moved to the liver and then metabolized without great benefits. In order to create a clinical product for the body to absorb, a biosynthetic polyphenol would need to be ingested orally, nasally or subcutaneously to enter the bloodstream and travel to the brain.
There are other complications. As head researcher Dr. Giulio Pasinetti, a neurologist and geriatric researcher at Mount Sinai, points out, grapes from California are different than grapes from Greece. Red wine can contain polyphenols with very different chemical structures. Finding the best red wine molecule combination to direct toward human testing can be hit and miss. “It’s a relatively new field, the focus on grapes in nutraceuticals, and it is so very complicated,” Pasinetti told Wine Spectator. “The big problem is that the answers appear to be somewhere in red wine, but commercially available simulations, like grape powders, are not nearly as powerful.”
For this study, reported in a recent issue of the Journal of Neuroscience, the Mount Sinai researchers administered several doses of red wine polyphenols catechin and epicatechin to lab rats. They found when they altered the chemical structure from a polymer to a more simple monomer, the polyphenols accumulated in the brain. The red wine compounds were administered in drinking water, which means they were absorbed early in the digestive process.
It is the first time these chemicals were found in the brain, suggesting a possible preventative role, Pasinetti believes. Rats on the monomer combination not only showed fewer symptoms of Alzheimer’s, but also appeared to be more intelligent in several tests.
Pasinetti admitted that developing a possible therapy for people suffering from Alzheimer’s or other cognitive diseases will take time. But Mount Sinai is using the results toward its clinical research into aging and red wine consumption. So far, the researchers have not found an adequate substitute for the responsible consumption of red wine. And there are, from time to time, setbacks in the research that can delay the results. “Nature is unpredictable,” Passinetti said. “Sometimes you can end up going in the wrong direction.”

At age 76, Burroughs remains Cascade’s chief product tester. “With any new idea,” he told Wines & Vines, “I take it out and see if I can break it.” Based on Cascade’s Platypus water containers, toted by backpackers for decades, PlatyPreserve is constructed of a three-layer laminate, starting with an inner polyethylene liner, a printed nylon layer and a third layer of protective film, all thermally laminated together at factories in Seattle and Ireland. The materials, the company claims, “ensure superior leak protection and provide zero taste transfer to your wine.” Printing inks are opaque, to eliminate any potential ultra-violet damage to the wine inside. Guala launches screwcap closure for sparkling wine

Guala has launched Viiva, a screwcap closure for sparkling wine.

The Viiva closure is suitable for up to 5GV (Gas Volume) liquid pressure and the group claims that it can maintain bubbles “for weeks after opening” even when laid on its side.

Guala’s Simon Yudelevich said: “Viiva brings all the advantages a still wine screwcap has over cork firmly into the sparkling arena. It’s safe and easy to open and can be re-sealed without any damage to the quality of the fizz, which dramatically increases the opportunities for by-the-glass sales and drinking.”

Viiva is the result of a five-year collaboration between Guala Closures and O-I Glass. It was officially launched in Australia last week with De Bortoli’s Willowglen and Trevi ranges.

De Bortoli’s national sales manager Peter Yeoman said converting the two ranges to the new closure put Australia’s sparkling wine industry “at the forefront of innovation”.

The manufacturers claim the product cuts wastage from cork TCA contamination as well as simplifying the supply chain by emiminating the need for the cork, muselet and hood fixtures which make up the traditional closure.

Ancient Vin Jaune fetches $49k

The 1774 bottle, which fetched US$49,343 (CHF46,000) at Christie’s Geneva last night, was sold to an unnamed French buyer.
It was part of a batch which had been kept intact for eight generations by the Vercel family, winemakers in the region, in a vaulted underground cellar in Arbois, the capital of Jura wines.
Arbois was also the birthplace of the creator of modern oenology, Louis Pasteur, who – according to legend, Christie’s said – in 1882 savoured a bottle from the same batch to celebrate his admission to the Academie Française.
Vin jaune, made from the local Savagnin grape, is unfortified, but is similar to sherry in that it gets its distinct nutty, dry flavour from a film of yeast, known as flor in Jerez and as voile in the Jura, that forms on the surface of the wine as it matures.
The last time wine from this batch was officially tasted, Christie’s said, was in 1994. It was pronounced ‘excellent [with] ‘golden-amber’ nectar, and ‘flavours of nuts, spices, curry, cinnamon, vanilla and dried fruits.’

Eric Olsen, vice president and chief winemaker with Constellation Wines U.S., the former winemaker of Geyserville’s Clos Du Bois Winery, of first place winner, Clos Du Bois Marlstone, 2002 Alexander Valley Bordeaux Red Blend: “Balance of a wine is transitory, so when making a wine for aging, you need to be careful to build the wine with appropriate fruit, acidity and structure. Balance and harmony are important for all wines at the moment of consumption, but understanding how key elements of a wine change over time is key. Some wines may not be balanced at release and are too tannic, but with 5 to 10 years, the components soften and fruit evolves to something very beautiful and balanced.”
Elias Fernandez, winemaker of Napa’s Shafer Vineyards, of second place winner, Shafer Vineyard’s Hillside Select, 2002 Hillside Select, Stag’s Leap District Napa Valley Cabernet Sauvignon: “The wine must have balance in order to get good results from aging. Wine should be in balance when it’s young. It can be loud and exuberant in youth, but it needs to be within a framework in which all components are in balance, with no one element dominating or elbowing forward.”

Blended Red Wines are the Hot Trend, According to Clayhouse Wines

PASO ROBLES, Calif., May 16, 2012 /PRNewswire via COMTEX/ — As early as two years ago, Sunset Magazine’s wine editor, Sara Schneider, chose wine blends as the magazine’s number four (of six) wine trends for 2010. Canada’s Tom Firth, writing in WineAccess in June 2010, said, “the future of red wines does not lie in the sudden popularity of an obscure grape, but rather in the artful creation of new and unique red blends.” Then, in February of this year, the Wine Business Monthly continued the refrain by writing that:
“(In 2011) Moscato, sweet reds, red blends, unoaked wines, Prosecco, Pinot Noir and Malbec were hot. As consumers continued to seek out value, the strongest sales growth came from wines priced at $10 to $15…The father of the red blend category has been Menage a Trois from Trinchero Family Estates.”
Paso Robles’ Clayhouse Wines has been making the popular Adobe Red since 2006 and has watched the red blend category burgeon, as well. And while the Adobe Red has a suggested retail price of $15, the winery also believes there is plenty of opportunity for red wine blends at higher price points.
Winemaker Blake Kuhn says that, “blends are what Paso Robles does best, at any price point.” He believes that as wine drinking palettes mature, consumers who now enjoy $10 blends will trade up to more expensive blends with additional character and flavor, and “that’s when they’ll really see the quality of Paso Robles wines shine.”
To bolster his claim, Kuhn plans to begin producing more blended red wines from the winery’s 1400-acre Red Cedar estate vineyard outside Paso Robles on California’s Central Coast. His Adobe Red and Adobe White wines are currently the only nationally available blends he makes, though smaller bottlings of select blends are made for the Clayhouse wine club. “The new ones will be Estate-bottled wines made in large enough quantities to showcase Paso Robles blends nationwide,” says Kuhn.
Based upon the quality of the grapes on the Estate, he’s currently considering a new white Rhone blend with Viognier and Grenache Blanc, and three red blends with different combinations of Cabernet Sauvignon, Syrah, Petite Sirah, Tempranillo and Malbec.
“Our vineyard is large enough,” says Kuhn, “that I have the luxury of getting first choice of the best quality grapes on the Estate.” Kuhn says the winery uses approximately 10% of the grapes it grows, selling the remaining 90% to other wineries throughout California.
But is it easy to get consumers to try blended wines rather than varietal wines, flavors of which they might already be familiar?
“Newer wine drinkers are much more adventurous,” says Clayhouse national sales manager Richard Hanen. “Twenty and thirty-somethings are fueling an incredible resurgence and expansion of the cocktail scene,” he says, “so they’re not only willing to experiment with new flavors, they’re also looking for flavor intensity, which blended wines provide.”
Kuhn will be taking his hypothesis on the road for a few weeks this spring to work with Clayhouse wholesalers and to offer up blending sessions for consumer groups. “We want to get people excited about red wine blends by allowing them to blend their own wine with samples we provide,” he says. “That will give them a feel for what goes into making a blended wine, some background on how flavors interact, and the concept of flavor balance.”
Kuhn sometimes uses as many as 50 different components to put together a finished wine blend, and he says each part contributes something specific to the finished whole. “With California wine,” he reminds us, “even if it says Cabernet Sauvignon on the label it only has to be 75% Cabernet…people drink a lot of blended wines already, without even knowing it.”

Wine lines targeting women are long on legs, short on flavor

Freud struggled to find an answer to the question “What does a woman want?” Ninety-odd years later, some in the wine industry think they know.
According to the new “girly-wine” brand marketers, we want to be skinny, to toss our hair playfully like ponies as we pick our bottles to match moods, not foods. We also crave an easy-sipping flavor profile with a naughty edge of sweetness.
High-heeled shoes star in our fantasies. Well, maybe they got that one right. But aren’t Canadian wine maker Strut’s labels featuring photos of long, shapely, perfect legs emerging from short skirts a guy fantasy?
In the past few years, the wine world has finally discovered that women drinkers are a coveted customer niche.
Women make up nearly 60 percent of U.S. wine consumers, according to the Beverage Information Group’s 2011 Wine Handbook.
Which is why there are so many companies are starting up lines of wines for women. Most are targeting women 21 to 34, but their marketing efforts often treat this audience as if it had no more sophistication than a bevy of sorority sisters on spring break.
Recently, global giant Treasury Wine Estates launched four wines under the “Be.” label: Flirty, a pink moscato; Bright, a pinot grigio; Fresh, an unoaked chardonnay; and Radiant, a riesling.
I guess so-called Millennial women are supposed to turn to wine only when they’re feeling upbeat, not when they’re tired and grumpy at the end of the day. Treasury’s website describes the pinot grigio mood: “Your sunny disposition sets your soundtrack to the soothing sounds of a steel drum band as you flip flop through fabulousness.”
This new marketing vision also assumes all women are diet-obsessed. Last month, three lower-calorie Skinnygirl wines from Beam Global Spirits & Wine hit retail shelves. Beam claims a five-ounce glass of any of the Skinnygirl wines contain 100 calories. (Typically, most wines contain 110 to 125, unless they’re sweet dessert bottlings.)
The white, red, and rose “guilt-free” blends are the first wines released by Skinnygirl, which has been making premixed cocktails since it was founded in 2009 by reality TV star Bethenny Frankel from “The Real Housewives of New York City.”
New York’s Mister Wright Fine Wines & Spirits stocks the rose, and so far the wine isn’t exactly flying out the door, according to manager Jodie Leishman. She also carries another “fun” wine brand for women, Mommy’s Time Out.
“Moms buy it for a joke, when they’re going on a play date with their kids,” Leishman says. “They buy it for the name, not the wine. I keep it on a low shelf.”
Barbara Insel, president of St. Helena, Calif.-based wine consulting firm Stonebridge Research, says men’s and women’s motivations are very different.
“In focus groups, women say they buy wine to go with food, to relax, to drink with friends, to have fun.” Men, on the other hand, “say they drink for health, but off the record, they admit they buy wines that will impress their friends.”
The Middle Sister wine brand reflects this lifestyle approach, according to Mary Ann Vangrin, one of its three partners. She says women look for wines that offer an emotional connection.
Its 10 sassy-style wines have personality-profile names like Drama Queen (pinot grigio), Smarty Pants (chardonnay) and best-selling Rebel Red (a blend). All share a flavor-phobic house style.
“Women don’t want a wine that bites back. They like ripe, fruit-forward wines without a lot of tannin and oak,” says Vangrin. She should know: Middle Sister regularly solicits feedback from its 115,000 Facebook friends.
Deutsch Family Wine & Spirits, which brought us the ubiquitous Yellowtail, has launched its own new wine marketed to women, Flirt, a blend of syrah, zinfandel, and tempranillo. Its approach is obvious yet more subdued and somewhat less cringe-worthy than other brands. Think lipstick advertisement.
